"Sae Akari, meaning “Clear Light,” is the child of one of our most popular previous cultivars, Sae Midori. The “Sae” was kept from its parent and the latter half given because it grows well under the brightness, akari, of the sun. Expect a sweet, vegetal aroma reminiscent of chestnuts, sweet potato, and edamame. When brewed, a strong umami provides the backbone to its earthy and vegetal notes that wander towards grassy.
Our Sae Akari was grown by Kawashima-san in the southwest highlands of Shizuoka. This farm has been in operation since 1921 and is celebrating its 100th anniversary this year! His tea is grown in well-draining soils found on the mountainous slopes of the region with an average elevation of 450-600 ft (150-200m). One of his farming secrets is making his own liquid fertilizer to encourage the health of endemic microbes in the soil. "
